Ingredienti
– 200 gr di orzo
– 250 gr di castagne
– 25 gr di funghi porcini secchi
– 250 gr di fagioli lessi
– 1/2 cipolla
– olio di oliva extravergine
– sale
– pepe
– 100 ml di brodo vegetale
Sciacquate l’orzo sotto l’acqua corrente, cuocetelo in acqua salata per 20 minuti e scolatelo.
Lessate le castagne in acqua bollente per 40 minuti.
Scolatele e sbucciatele
Dopo aver tenuto i funghi in ammollo per 30 minuti, soffriggete nell’olio della cipolla e del rosmarino tritati.
Aggiungete quindi i funghi ben strizzati e mescolate.
Quando i funghi saranno appassiti mettete le castagne ed amalgamate per far insaporire il tutto.
Scolate i fagioli e aggiungeteli
In ultimo mettete l’orzo, ricoprite con il brodo caldo e cuocete per 10 minuti. A fine cottura aggiustate di sale e aggiungete il pepe.
