Sono legumi molto versatili e nutrienti. I piselli freschi sono poveri di grassi e apportano poche calorie (circa 80 kcal ogni 100 grammi). Tuttavia, sono ricchi di fibre e contengono un buon quantitativo di proteine vegetali. Inoltre, hanno un alto contenuto di carboidrati, il che giustifica il loro sapore dolciastro. Per la salute hanno benefici a livello cardiocircolatorio, sono alleati dell’apparato cardiocircolatorio, favoriscono la diuresi, contrastano la stitichezza e a livello di colesterolo e glicemia aiutano a mantenerne bassi i livelli.
